A taste of Sahara’s golden

Saff Tali are saffron specialists who source the highest quality saffron from the Moroccan village of Taliouine, on the edge of the Sahara desert.

The goal is to blend the finest SAFFRON from MOROCCO with everyday FOOD and DRINK to offer you something a little, extra special. Our first commercialised, saffron product is a SAFFRON flavoured BEER.

OUR SAFFRON.
01
MOROCCAN SAFFRON
Saff Tali’s saffron comes from Taliouine, on the edge of the Saharan desert.

More concerned about the quality than the quantity, Morocco is one of the few countries that produces organic saffron. Before being handpicked, the three stigmas found in each crocus flower draw a huge amount of nutrients from the soil, so the cultivated land must be set aside for a 5 year recovery period.

-
A perfect four-seasoned climate and an ecological approach added to the mix leaves you with a saffron

that possesses one of the highest percentages of Crocin (colour), Picrocrocin (taste) and Safranal (smell) concentrations. This enables you to use less of its crimson stigmas to better effect.

02
HEALTH BENEFITS
It is a powerful antioxidant packed with manganese and vitamin C

meaning saffron is antibacterial, anti-inflammatory and anticancerous, really strengthening the immune system. High levels of B vitamins promote muscle and nerve health whilst a high potassium count reduces blood pressure.

As well as the heart getting a boost thanks to the Magnesium content, a cup of saffron tea after dinner will help with digestion and sleep as it has mild sedative properties.

Our Beer.
01
THE SMELL
Although saffron alone is bitter, it has a sweet smell
that permeates from whatever drink or food it touches.
02
THE TASTE
Saffron is a grounding flavour
Due to its amazing ability to pull all the nutrients out of the soil, saffron is a grounding element, taking the edges off of bitter and acidic flavours. This leaves a smooth, easy-to-drink lager with notes of honey and tangerine in the aftertaste.
03
THE COLOUR
Also known as the Saharan gold
The beer becomes a deep, rich orange, even tinting the bubbles yellow.
FUTURE PRODUCTS.
CRISPBREAD
Packed with nutritious seeds this moorish bread pairs deliciously with a slice of cheese and some chutney or jam but is equally good crumbled over a salad.
JAM
Fresh strawberries are balanced in a saffron blend that enables us to take advantage of the fruit's natural sugars without adding too much.
TEA
Grounded saffron is mixed into a sachet with mint (a moroccan's favourite mix). Add a spoonful of honey for the soothing spice/herb combo to become a stress softener.
THE TEAM.
Sébastien Fiducia
DIRECTOR

“I’m a chef turned entrepreneur, who was born in Morocco, spending 15 years learning about this resourceful land’s secrets. Here I fell in love with the elusive spice that is saffron and the many ways it can transform meals. In an ever-changing world where people are becoming more health conscious and aware of the benefits of superfoods I knew there was a real opportunity here to do something different, so I asked Jake to join me on the tasty adventure that is Saff Tali.”

Jake Balfour-Lynn
DIRECTOR

“I’m a film director, that instantly got swept up by Sébastien’s passionate story. Together we then set off on a journey to understand how to cultivate Morocco’s best kept secret and this was a real eye opener for me in terms of understanding the local culture. My involvement created more of an artistic mind to the process, however, I soon learnt that there were a lot of similarities between selling a script and selling saffron.”
